    Short answer

Apple's last macOS for the iMac Pro 2017 is macOS Sequoia. It has a T2 security chip, and OpenCore Legacy Patcher does not support T2 Macs, so newer macOS versions are not possible with OCLP. Stay on macOS Sequoia, which keeps getting Apple security updates for now.
